I would also take a look at DAML-S (see http://www.daml.org/services/). I believe that organization has already developed prototypes of their ontologies built on top of UDDI. They also describe the relationship between DAML-S and UDDI in http://www.daml.org/services/daml-s/0.7/survey.pdf.
